I found Brewlab after deciding to move to Peru with my wife Vanessa (who is from Lima) and our 2 children in 2009. My idea was to set up a brewpub. I took advantage of the 3 week Certificate course in July of 2009 as I had already booked to fly out to Peru in September and had no time for the longer more extensive course.
The course was both entertaining and informative with the right balance of theory and practical training. To this day I formulate recipes in the way I was taught. Each time I make beer I remember the experimental brews I created on the course and the friendly atmosphere between the classmates.
It took far longer than intended to open our pub. In the mean time I joined a rugby club and used the team as guinea pigs for the brews I was able to make in my house. Finally in February 2014 Wicks’ Brewpub opened in the Barranco district of Lima, Peru. Helped by a boom in craft beer here in Peru, we have never looked back.
Throughout both my commercial brewing in the pub and the beers I made at home, the knowledge picked up at Brewlab has been indispensible. I would, and have at every opportunity, recommended Brewlab to anyone who asks. It is excellent.
